1 large apple
1 1/2 cups whole wheat flour
1/4 cup oatmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 cup plain yogurt
1/2 cup water
1/4 cup vegetable oil
2 tablespoons honey
2 eggs
1 cup grated cheddar cheese
1 (8 ounce) package Neufchatel Cheese
(low fat cream cheese), room temperature
2 tablespoons plain yogurt
2 tablespoons honey
Preheat oven to 400 degrees. Core, slice and mince apple. Set aside. In a large bowl, mix together flour, oatmeal, baking powder and baking soda. In a medium bowl, blend together yogurt, water, oil, honey and eggs, and then stir in the apple and cheese. Add to the flour mixture and stir until mixed. Spoon batter into greased mini muffin tins; fill each cup about 3/4 full. Bake for about 15 to 20 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let rest in the muffin tins for a few minutes, then remove and set aside to cool.
Frosting directions: Combine Neufchatel cheese (at room temperature), honey, and yogurt until smooth. Spread on muffins. Makes about three dozen mini muffins. If you prefer to make a single-layer cake instead, spoon the batter into a sheet pan and bake for an extra 10 minutes. Decorate with chopped pecans, shredded carrot or miniature dog bones for special occasions.
Cool dog ice cream

32 ounces plain yogurt
1 mashed banana
2 tablespoons peanut butter
2 tablespoons honey
Mix all ingredients in a blender. Freeze in ice cube trays, paper cups, or even a Kong toy. Before serving, microwave for a few seconds. For special occasions, create paw-shaped or bone-shaped ice cream treats. Spread mostly frozen ice cream to 1- to 1 1/2-inch on wax paper. Freeze for five minutes and then use a cookie cutter to cut out a treat. Return shapes to freezer and freeze solid.
Peanut buttery bones

2 cups whole-wheat flour
1 tablespoon baking powder
1 cup natural peanut butter
1 cup skim milk
Preheat oven to 375 degrees. In a bowl, combine flour and baking powder. In another bowl, mix peanut butter and milk. Add wet mixture to dry and mix well. Turn out dough on a lightly floured surface and knead. Roll out to 1/4-inch thick and cut out shapes.
Place on a greased baking sheet and bake for 20 minutes or until lightly browned. Cool and then store in an airtight container.
